Red spanish onion jam

Add this yummy sweet jam to your favourite sandwiches, bbq steak or a toasty




Ingredients


  • 600 grams red spanish onions

  • 2 tablespoons of brown sugar

  • 2 tablespoons of balsamic vinegar

  • 1 sprig of fresh thyme

  • 1 tablespoon of olive oil

  • 1/2 cup cold water


Method


  1. Add olive oil to a heavy based saucepan over medium heat

  2. Slice onions into rings

  3. Add onions and thyme and cook stirring occasionally for 15-20 minutes

  4. Stir in brown sugar and stir for another 3 minutes to ensure its dissolved and caramelised

  5. Add balsamic vinegar and 1/2 cup cold water

  6. Bring to the boil then reduce heat to simmer uncovered for 5 minutes or until thick
