Add this yummy sweet jam to your favourite sandwiches, bbq steak or a toasty

Ingredients
600 grams red spanish onions
2 tablespoons of brown sugar
2 tablespoons of balsamic vinegar
1 sprig of fresh thyme
1 tablespoon of olive oil
1/2 cup cold water
Method
Add olive oil to a heavy based saucepan over medium heat
Slice onions into rings
Add onions and thyme and cook stirring occasionally for 15-20 minutes
Stir in brown sugar and stir for another 3 minutes to ensure its dissolved and caramelised
Add balsamic vinegar and 1/2 cup cold water
Bring to the boil then reduce heat to simmer uncovered for 5 minutes or until thick
